Assistant Restaurant Manager - Deputy General Manager

Someone who feels the rhythm of a busy service, gets energy from a team firing on all cylinders, and is ready to share full responsibility for the success of L'Osteria Amsterdam with our Restaurant Manager Lisa. Not just working in the operation — running it together.
From Assistant Restaurant Manager to Restaurant Manager
We're not hiring for the next twelve months. We're hiring someone who wants to build L'Osteria Netherlands with us. We run restaurants in Amsterdam and The Hague, and next year we open our third location in Roermond (Designer Outlet Centre). That means leadership roles are genuinely being created here — not a theoretical promise of growth, but concrete opportunities towards Restaurant Manager or joining the opening team of new locations.
Who will you work with?
You'll work side by side with Lisa, our Restaurant Manager and Altea and Ana our floormanagers. Lisa's known for her high standards, her energy on the floor and her focus on developing people. We're looking for someone who wants to stand next to her: keeping each other sharp, dividing responsibilities, and raising the restaurant's level together. People don't choose companies — they choose leaders. Here, you get a good one.
Together with Lisa, you'll run a restaurant with 55 colleagues, 3.000+ covers per month and full responsibility for guest experience, team developtment, revenue, labour cost and food cost.
- You directly lead shift leaders, hosts, bartenders and waiters. You set the standard on the floor: when you're sharp, the team is sharp.
- You're the operational heart during your shifts: opening, closing, running service and coaching your team on the job — front of house and kitchen alike.
- You share responsibility with Lisa for the schedule and the KPIs: revenue, productivity, labour cost and guest reviews.
- You guard the L'Osteria guest standard — from the first benvenuto to the last espresso.
- You spot what can be better and fix it. Less talking, more doing.
Diplomas matter less than proven leadership and the right mentality.
- You've already shown you can take a team with you in performance, energy and hospitality — as a shift leader, assistant manager or team captain ready for more.
- You understand how revenue, labour cost, productivity and guest reviews together determine a restaurant's success — or you want to learn it fast.
- Hospitality is in your DNA. You keep a cool head when it gets busy and bring your team along.
- You speak good Dutch or English — both is a big plus.
- You're flexible for evening and weekend shifts — it's hospitality, after all.
- You work directly with an experienced Restaurant Manager — no management layer in between.
- You own KPIs, scheduling and team development — this is not a supporting act.
- You join an international growth brand with a third Dutch location under construction.
- You get a concrete development track towards Restaurant Manager — if that's what you want.
- Our kitchen closes at 22.00— no shifts until deep into the night
- Salary between €2,900 and €3,900 gross per month — where you start depends on proven leadership experience and experience managing by the numbers.
- Full-time contract of 38 hours — initially for 1 year, then a permanent contract if we're both enthusiastic.
- 8% holiday allowance and 25 holiday days on a full-time basis.
- Pension and travel allowance under the Dutch Hospitality CAO.
- Tips are divided equally amongst the team, everybody is just as important to the total guest experience.
